Oh, the Weather Outside is Frightful: Time for Sweet Potato Peanut Soup

This may sound a little strange, but I promise you that this is a really tasty and filling and comforting soup.  Tonight is our traditional pizza night and my daughter and I just didn’t feel like pizza (after having such a rich dinner last night).  Leah’s two favorite things are sweet potatoes and peanut butter, so it reminded me of a soup I used to make back in my vegetarian days and I gave it a shot to recreate it, via the paleo way. Okay, yes, I know that not everyone thinks that peanuts are paleo, but you could substitute almond butter for the peanut butter if you’re that technical.  I think the results would be just as tasty and fulfilling.  This is really tasty, but, of course, how could you go wrong with ginger and curry and sweet potatoes?  It smelled so good cooking that my youngest son actually passed up the homemade pizza for some soup (and then he couldn’t resist the pizza either and had some of that).  It’s simple to make:  it could easily be done in about a half hour.  But, I bet the flavors will be deeper if you let it sit overnight.  It’s so filling that a pot will last for quite a few lunches.  Here’s the recipe:

Peanut Soup

 

Ingredients:

2 Medium Onions, diced

1 Tbsp. Minced Fresh Ginger

1 Tbsp. Coconut Oil

½ Tsp. Sea Salt

2 Med. Sweet Potatoes, peeled and diced

2 Lg. Carrots, peeled and chopped

4 Cups Chicken Broth

1 C. Organic Tomato Sauce

1 C. Chicken Broth

1 Tbsp. Turbinado Sugar

2 Tsp. Curry Powder

1 Tsp. Sea Salt

 

Directions:  In a medium soup pot over medium high heat, sauté the onions, ginger, and salt until onions are translucent, about 5 minutes.  Add in sweet potatoes, carrots, and 4 cups chicken broth and allow to simmer until carrots and potatoes are thoroughly cooked.  With an immersion blender (or, you can do this in your regular blender), blend ingredients until they are thoroughly pureed.  Stir in the tomato sauce, broth, sugar, curry powder, and salt.  Adjust seasonings as required.  Simmer on low heat for about 10 more minutes.
