It’s tough getting my daughter to eat salad. The dressing really has to be exquisite to make her want to eat it. She’s not ready for a vinegar based dressing quite yet – she’s not a huge fan of vinegar. But, she likes this ranch dressing. I also tamed it down by having mostly meat in the ‘salad’ and less leaves. I also used the baby spinach, which doesn’t have any of the bitterness that some lettuces have. The burger is lamb, which tastes really good with the ranch.
1/2 Cup Paleo Mayonnaise (I make my own)
3 Tbsp. Canned Coconut Milk
2 Tsp. Fresh Chives
2 Tsp. Fresh Parsley
1/2 Tsp. Dried Dill (or 2 tsp. fresh)
1/8 Tsp. Granulated Garlic
1/8 Tsp. Onion Powder
Fresh Ground Black Pepper, to taste
Whir everything in a blender or mini food processor. If you want it a dip consistency for veggies, reduce the coconut milk to 1 tablespoon.
