Paleo Sweet Potato Hash

I was getting a little tired of eggs for breakfast every day.  I love eggs, but I also like a little variety in my diet.  Well, I looked in the fridge this morning and there were only two eggs, not enough for both my daughter and I to have eggs:  plus, once my sons see that we’re having eggs, they want them too.  So I did a Door Knock Dinners sort of thing and pulled out what seemed like it would go together.  And, what better to improvise with than hash.  I had some precooked sweet potatoes left over from our week at camp, and some bacon.  I added in the kale to keep us fuller longer and give us a little extra fiber.  So, here’s the recipe:

Ingredients:

1 Tsp. Coconut Oil

4 Slices Uncured Bacon, chopped

1 Med. Onion, chopped finely

2 Sweet Potatoes, baked

2 Cups Chopped Kale

Sea Salt, to taste*

 

Directions:

Heat a skillet and add coconut oil to it.  Turn the heat to medium high and add the bacon to the hot oil and cook until crispy.  Add in the onions and cook until translucent and slightly caramelized.  Add in the chopped sweet potato and cook until heated through.  Add the kale and cook until it is wilted.  Season as desired.  Makes two servings.

*I’ve been using Himalayan Pink salt lately.  I’ve read that it has natural iodine, so it’s not processed like conventional table salt.  Other benefits:  lower in sodium, creates an electrolyte balance, increases hydration, regulates water content both inside and outside of cells, prevents muscle cramping, aids in proper metabolism functioning, strengthens bones, lowers blood pressure, helps the intestines absorb nutrients, prevents goiters, improves circulation, and dissolves and eliminates sediment to remove toxins.

Wow!  That’s just what I read, though, and I don’t always believe what I read.  But, I do have to say that I like the taste of the salt better and if it only has one of the long list of benefits, it’s worth it.  It’s expensive, but I found that I don’t use nearly as much pink salt when I’m cooking as I do conventional salt.  I haven’t yet looked for the most inexpensive sourse:  I just got some from my local grocery store.  But, now that I’m hooked I’ll probably look for it on amazon and probably vitacost too, to see where I can get it the cheapest.  Give it a try sometime.
